What Changes When the Light Changes

What Changes When the Light Changes

We do not change the menu on the first day of a season. We change it when a single ingredient stops being at its best and something else takes its place in the market stalls before dawn.

A menu that never changes is a menu that has stopped listening to its ingredients.

This late-winter turn brought heirloom carrots forward and asparagus in early — three weeks ahead of the usual date, because an unusually mild February pushed the first shoots up early.

The kitchen adjusts within days, not months. A menu that never changes is a menu that has stopped listening to its ingredients.
